Prep: 5 min · Cook: 10 min · Serves: 3

Ingredients

  • 8 oz spaghetti
  • 1 lb large shrimp, peeled and deveined
  • 4 tbsp butter
  • 4 garlic cloves, minced
  • ¼ tsp red pepper flakes
  • ¼ cup pasta water
  • 1 lemon, juiced
  • ¼ cup chopped parsley
  • Salt and pepper to taste

Instructions

  1. Cook the spaghetti in salted water until al dente. Reserve ¼ cup pasta water, then drain.
  2. Melt the butter in a large skillet over medium heat. Add the garlic and red pepper flakes and cook 30 seconds.
  3. Add the shrimp and cook 2 minutes per side until pink and opaque.
  4. Add the drained pasta, reserved pasta water and lemon juice. Toss to coat.
  5. Stir through the parsley, season to taste and serve immediately.

Tips

Do not walk away from the shrimp — they cook in minutes and turn rubbery if overdone. Pull them the moment they curl into a C.
